The Old Testament is not primarily a history of the Jews. Along with the New Testament,
the entire Bible records the history of salvation. That is a theological point.

As I've pointed out to you before, the Bible is not a history or science textbook. It contains some human history, but using various literary devices and constructs. It unfolds God's plan for saving man.

The Old Testament points to Jesus Christ. It is full of prophecy, which is fulfilled only in Jesus Christ. The Jewish people are our older brothers in the faith of Abraham, Isaac, and Jacob. If you bothered to read the New Testament, you'd know that. Jesus tells us, God is the God of Abraham, Isaac, and Jacob. Therefore to be anti-Semitic is to set yourself against God.

We accept the entire Bible, because St. Paul tells us (in his First letter to Timothy) that:
All Scripture is inspired by God! (2 Timothy 3:16-17)

The Catechism of the Catholic Church, tells us that the New Testament is hidden in the Old and the Old Testament is fulfilled in the New.

There was a heretic by the name of Marcion circa 150 A.D. who proposed eliminating
the Old Testament. He was quickly condemned so you're not the first to propose this heresy.
